
strawberry scones
these crispy, crumbly, strawberry scones are even yummier than they look and even easier to make than you would think! enjoy with a cup of tea by the fire or on a sunny, spring day, these scones are perfect for any time of the year!
prep: 20 mins bake: 15 mins cool down: 10 mins overall: 45 mins
serving: 12 scones
ingridients
• 2 cups all-purpose flour
• 3 tablespoons granulated sugar
• 1 tablespoon baking powder
• 1/2 teaspoon salt
• 1/2 cup (1 stick) of unsalted butter chilled
• 1 cup chopped fresh strawberries
• 1 egg
• 1/2 cup heavy whipping cream chilled
• 1 tablespoon milk (to brush on top)
• 1/2 tablespoon granulated sugar (to sprinkle on top)
scone glaze
• 2/3 cup powdered sugar
• 1 tablespoon milk
1. set-up
- preheat oven to 400F.
- line a baking sheet with parchment paper.
2. dry ingredients
- in a large bowl, combine flour, sugar, baking powder and salt.
- grate chilled butter into flour mix and cut into it using a fork or pastry blender until mixture resembles pea-sized coarse crumbs. (you might need to work it with your hands as well)
- gently toss in strawberries.

3. wet ingredients
- beat egg with a fork.
- stir in heavy cream.
1 egg, 1/2 cup heavy whipping cream chilled
4. combine
- make a well in the center of the flour mixture.
- add egg mixture to flour mixture and us a wooden spoon to gently stir just until moistened.
do not over mix
5. bake
- place dough onto generously floured sheet of parchment paper.
- shape the dough into a 3/4 inch thick circle.
- cut into 12 equal wedges and pull them apart (at least 1/2 inch apart).
- slide parchment paper onto baking sheet.
- brush wedges with milk and sprinkle with sugar.
- bake for 15 mins or until puffed and golden.
- let them cool down slightly (about 10 mins) before glazing.
1 tbsp milk, 1/2 tbsp granulated sugar
6. scone glaze
- stir together powdered sugar and milk.
- drizzle glaze over scones.
- serve scones warm or at room temperature.
