
chocolate olive oil cake
olive oil lover or not, you will LOVE this cake. it's light, airy, fluffy, moist, rich, and chocolatey like no other chocolate cake! its simple ingredients make it not too sweet and healthier than most chocolate cakes. it is perfect for layering to make a bigger cake, but it's just as good eaten alone. a simple sift of powdered sugar ontop gives it an elegant look, you can't wait to indulge in. there really is no flaw about this cake!
*one bowl recipe!!
prep: 15 mins bake: 30 mins cool down: 30 mins overall: 1 hour 15 mins
serving: 10 medium sized slices
ingredients
• 1 cup granulated sugar
• 2 large eggs room temperature
• 1 cup full fat plain Greek yogurt room temperature
• 2/3 cup olive oil
• 2 teaspoons vanilla extract
• 1/2 teaspoon espresso powder
• 3/4 teaspoon salt
• 2/3 cup unsweetened cocoa powder sifted
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1 cup all-purpose flour
• 1/2 cup mini chocolate chips
• powdered sugar (for dusting ontop)
1. base
in a large mixing bowl, whisk together the sugar and eggs until pale and foamy. (about 1 minute)

2. add in
whisk in yogurt, olive oil, vanilla, espresso powder, cinnamon, and salt until smoothly combined.
1 cup yogurt, 2/3 cup olive oil, 2 tsps vanilla extract, 1/2 tsp espresso powder, 3/4 tsp salt
3. dry ingredients
- whisk in the cocoa powder until smoothly combined
- sprinkle the baking powder and baking soda over the top.
- sprinkle flour and whisk until everything is evenly incorporated
stop stirring after dry ingredients disappear, there may be small lumps which is fine.
2/3 cup cocoa powder sifted, 1 tsp baking powder, 1/2 tsp baking soda, 1 cup flour
4. combine
fold in chocolate chips
1/2 cup mini choco chips
5. bake
- pour batter into prepares pan, smooth with spatula, and tap pan on counter a few times to remove any air bubbles.
- bake about 30 mins or until edges begin to pull away from pan, and toothpick inserted in the center comes out clean.
- place pan on wire rack to cool for 15 mins, then take out of pan or unmold springform and let cool completely on wire rack.
6. decorate
once completely cooled, sift powdered sugar on top.
