very vanilla cupcakes
as a young girl cupcakes were my favorite thing, especially vanilla! i loved eating them, looking at them, drawing them. as i grew up, i learned to make them myself. i never thought i would taste a cupcake as good as this one!

ingredients
• 1 1/4 cups all-purpose flour
• 1 1/4 teaspoon baking powder
• 1/2 teaspoon salt
• 1/2 cup (1 stick) unsalted butter softened
• 1/2 cup sugar
• 2 eggs room temperature
• 2 teaspoons pure vanilla• 1 1/4 teaspoon baking powder
• 1/2 teaspoon salt
• 1/2 cup buttermilk (can be homemade) room temperature
1. set up
- preheat oven to 350F
- line a cupcake/muffin pan with cupcake liners
2. dry ingredients
in a medium bowl, whisk together flour, baking powder, and salt. set aside.

3. cream together
using a handheld mixer or a stand mixer, beat butter and sugar until thick and fluffy (about 5 mins). scrape down as needed.

4. batter
- add eggs one at a time, beating well after each addition. scrape down bowl.
- add vanilla and beat to combine.

5. combine
reduce mixer speed to low. add 1/3 of the flour mixture followed by 1/2 of the buttermilk, mixing with each addition. repeat until there's nothing left to add. beat until just combined. don't overmix

6. bake
- divide batter evenly into 1 12-count cupcake/muffin pan, filling 2/3 full.
- bake 20-25 mins or until a toothpick inserted in the center comes out clean.
- let them cool in pan for 5 minutes, then transfer to a wire rack and cool to room temperature before frosting.
