ingredients
shortbread crust
- 2 cups all-purpose flour
- 1 cup (2 sticks) unsalted butter room temperature
- 1/2 cup granulated sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt

chocolate ganache
- 1 1/2 cups semisweet chocolate chips
- 1/3 cup heavy cream
1. set up
- preheat oven to 350F
- line a 9x9 inch baking dish with parchment paper.
2. shortbread crust
- cream the butter.
- add sugar, and salt, and beat until light and fluffy.
- add vanilla and egg yolk and mix until combined.
- add the flour in 3 batches and mix until combined.
2 cups all-purpose flour, 1 cup (2 sticks) unsalted butter, 1/2 cup granulated sugar, 1 egg yolk, 1 tsp vanilla extract, 1/2 tsp salt
3. bake
- transfer to your prepared pan and press into an even layer.
- bake for about 22 mins or until the edges are golden.
4. caramel
- while the base bakes make the caramel.

- let the shortbread cool for about 10 mins before pouring caramel on top.
- pour caramel onto the shortbread base and put in the fridge to chill until you make your ganache.
5. chocolate ganache
- add chocolate chips and cream to a bowl and microwave in 20 second bursts (should take about 3 times).
- pour the chocolate over the caramel and smooth into an even layer.
- put in fridge for about 30 mins or until ready to eat.
make sure to really stir in between 20 sec bursts, you don't want to burn the chocolate!
