my first time making these cookies was in 2020 with my aunt in Texas. ever since, i've made these cookies every year by request. whether i'm giving them out to neighbors and friends or enjoying them with family, these cookies are a fan favorite!

ingredients
• 1 cup unsweetened cocoa powder • 2 cups sugar • 1/2 cup vegetable oil (you can also use avacado oil or olive oil) • 4 eggs • 2 teaspoons vanilla extract • 2 cups flour • 2 teaspoons baking powder • 1/2 teaspoon salt • 1 cup powdered sugar for rolling
1. base
in a large bowl or using a stand mixer fitted with paddle attachment, mix together cocoa powder, sugar, vegetable oil until combined.
beat in eggs one at a time.
add vanilla and mix until all ingridients are combined.

2. dry ingridients
combine flour, baking powder, and salt in a small bowl.

3. combine
stir dry ingredients into cocoa mixture until incorporated.
cover dough with plastic wrap and refrigerate at least 4 hours.
4. bake
preheat oven to 350F and line cookie sheets with parchment paper.
roll dough into 1-inch balls, and roll into powdered sugar until completely coated before placing on cookie sheet 2 inches apart.
bake 10-12 minutes.
let stay in cookie sheet about 5 mins before transferring to wire rack.
